WINE MAKING
This sparkling wine is the result of a long Charmat method of about two months in autoclave, made from a blend of Glera and Pinot Noir. The Pinot Noir grapes, after a soft pressing, are left in contact with the skins for the period necessary to achieve the desired color. The must then faces fermentation in stainless steel at a controlled temperature of 18°C. A cuvée is then prepared with Prosecco wine (90 percent) for taking foam in an autoclave. This process takes about 60 days until a pressure of 5 atm is achieved.

TASTING
Nose: An intense aroma with delicate hints of white flowers, apple, and pear—typical of Prosecco—blending with distinct notes of red berries.
Taste: Fresh, velvety flavor with good acidity. It is savory, with a dry, lingering finish. Velvety, fresh, well-balanced, and lively, with an elegant aftertaste. Fine, persistent bubbles.

Pairings: It pairs well with a wide variety of dishes, from raw seafood appetizers to delicate first and second courses.
