The first stage involves soft pressing and traditional white vinification, fermenting at low temperatures to preserve the quality of the grapes. In a second stage, the prise de mousse is implemented in autoclaves for about 30 days until an internal pressure of 2.5 atm is reached.
We recommend serving this wine at a temperature of about 6 to 8° C.
